Many knives have wooden handles but are black. This is most often seen in Japanese/Asian knives. I would like to know how they were able to do this.

How come they never seem to fade? Because they are so durable to fading (despite being handled...everytime it is in use, washed in water and repeated over and over again) this makes me wonder if it really is a stain? Or is it some type of dye that the wood soaks up?
I went on Oneida's website to look at the knives, and more importantly, the prices, and would almost guarantee that the handles aren't made of solid Ebony, as it is too expensive. My guess is that they are made of a wood grain plastic, phenolic material, or Ultra High Molecular Weight polyethylene, which is impervious to almost anything. They could also be made of actual wood and dyed or stained in some sort of pressure/heat process, but I think they're probably using some sort of plastic.
I have an old J A Henckels chef's knife that I've had to reattach the handle to and those were definitely made from ebony, though the ones available now seem to be molded, too.
