Irony of a vegan sword-wielding aside, Wooden scabbards have long been used for thier durability and wonderful ability to be used as a parrying stick in the off hand. The only kicker is that the have to be-custom made for the shape of the blade, as they don't strecth like a conventaial blade. FOr a easier solution, a lot of us have made linen carry-bags for our swords, the linen does'nt trap moisture, so while not as long lasting, is far better for the sword in the long run.
