How can I learn how to effectively sharpen knives?
I cook from scratch a lot, so I'm constantly using my chef's knife for everything. I've gotten quite good with a honing steel to keep the edge, but before I purchase a really nice chef's knife I'd like to feel more comfortable with my ability to use a whetstone. I've never used a whetstone, have an idea how it works but don't even know where to begin searching for pointers. Any feedback you can provide regarding whetstone usage, training, or even brands of good whetstones (if such a thing matters) would be greatly appreciated.
On a related note, I have a cheap chef's knife which was never sharpened all the way to the heel of the blade. Is it possible to form this (tapered but never sharpened) heel into a blade using only a whetstone, or should I use a grinder?
take a minute to check out "Lansky" knife sharpeners i have used mine for many many years and just love it. there is a pedestal that you put the knife holder on which has several holes in it to give different angles on the blade, from surgical to utility. the stones are on a stick and with the stick in one of the holes you can cut a perfect edge every time . there are several different grits of stones available as well. i think a starter kit comes with only a few of the stones. you can always add on later. by the way i mounted my pedestal to a piece of 2x6 wood for a more strudy feel
